The wine of Château Haut-Bailly is one of the favorites of Descartes and Tatyana Ostrovskaya. Elegant, delicate, and perfectly balanced. The château itself, where lunch is served to us, is the true face of Bordeaux in architecture, design, and cuisine.
The lands where Château Haut-Bailly stands today were already mentioned in archives in 1461 as extremely valuable for grape growing. In 1630, the château was purchased by Firmin Le Bailly and Nicolas de Leuvarde, wealthy Parisian bankers and great admirers of Graves wines, and it remained in the Bayly family’s ownership until 1736. Since 1998, Château Haut-Bailly has been owned by American Robert G. Wilmers, chairman and CEO of New York’s M&T Bank. Robert, who loved Bordeaux wines all his life, was behind every strategic decision and ensured that Haut-Bailly progressed while preserving its traditions.

The history of the château dates back to 1292, but it was from 1740 that Château Carbonnieux became the focus of investments, and soon the white wines of Carbonnieux became some of the best in Graves, while the winemaking methods became among the most modern in Bordeaux. Thanks to the talent and enterprise of Benedictine monks, the famous bottle with the scallop shell of Saint James gained worldwide fame—from Constantinople to the United States.
Château Carbonnieux wines were also favored by American President Thomas Jefferson, who even planted a walnut tree on the château’s grounds. From the early 20th century until 1956, the estate changed hands many times before coming into the possession of the Perrin family. Marc Perrin began renovating the château and significantly expanded the vineyards, while his son Antoine modernized the old and built new cellars for vinification and aging, and also promoted Carbonnieux wines and Bordeaux in general. His descendants, Éric, Christine, and Philibert Perrin, continue their father’s great work, and today Château Carbonnieux produces truly unique wines.
